Cream-based ghee vs bilona ghee: what is the difference?

Bilona ghee starts with curd. Milk is set into curd, the curd is churned into butter, and the butter is simmered into ghee. It takes more time and usually more milk, so it is often priced higher.

Cream-based ghee skips the curd. The cream is taken from the milk, turned into butter and clarified.

Both are traditional. We make KUMUD ghee by the cream-based method and say so, because the useful thing for you is knowing which one you are buying.
